HOMEMADE APPLE CRISP

Desserts

IMG_0859.png

My Mother-in-Law brought us back some Apples from the mountains so I decided to come up with an Apple Crisp recipe.

Its very Similar to my Peach Crisp Recipe with just a few changes.

I’m sure you can use canned apples for this recipe but nothing is better than homemade in my opinion. So just take the extra 5 – 10 minutes to peel and cut up your apples…It’s worth it!

IMG_6166.jpeg

I’m using Fuji apples because they’re our favorite, however you can also use Granny Smith. Just make sure that you use an Apple that has a firm center vs. a soft one, otherwise you will have applesauce.

Peel apples using a knife then chop into bite size pieces.

IMG_6168.jpeg

To make cutting easier, I just stand the Apple up and cut it on all four sides and then chop using a butcher knife.

IMG_6170.jpeg

Add Sugar, Cornstarch, Cinnamon, Nutmeg and salt to Chopped Apples.

IMG_6172.jpeg

Mix Thoroughly using a spatula.

IMG_6177.jpeg

Melt two tablespoons of butter in cast iron skillet on medium heat. Add in apple mixture and cook 8-10 minutes til thickened and apples are slightly tender.

IMG_6175.jpeg

While Apples are cooking make topping in a separate bowl.

Add Flour, Brown sugar, oatmeal, nutmeg and cinnamon to bowl and mix with a fork.

IMG_6180.jpeg

Add in softened butter and mix thoroughly using your fingers until crumbly.

IMG_6182.jpeg

Add in Toasted Pecans and mix.

IMG_6184.jpeg

Sprinkle topping evenly over the cooked apple mixture and Bake at 350 degrees for 30 minutes.

The older we get, the more we realize that one of life’s greatest blessings is growing up surrounded by people who love you. Last year, my friend and I took a road trip to Macon, Georgia, to tour the incredible Hay House. No matter how many tips and tricks we’ve tried, we just can’t seem to keep mums alive. 😂 So ready for cooler weather, Mountain leaves, sweaters, pumpkin carving, pecan pie and pumpkins everywhere 🍂🍁 There was a time when the front porch was where the day ended. Neighbors stopped by, children played until the fireflies came out, and conversations lasted long after the sun went down. Todd and I have found that one of the best ways to experience a town is by bringing our bikes along. Which porch would you want to sit and enjoy a nice tall glass of freshly brewed sweet iced tea? Pimento cheese is a staple here in the south and although I prefer homemade, you can usually find a good one in the local farm stores. Watching her pick tomatoes from the garden, feed the chickens, and clap with excitement every time she finds an egg reminds me that joy doesn’t have to come from expensive toys or elaborate plans.
