FRITATTA
One of my favorite things to make for breakfast is a Frittata (Basically a crustless quiche).
Its lower in carbs and I can make it at the beginning of the week and then eat on it all week long. It is super easy to make and I typically make it in my favorite large Cast Iron Pan.
You can even add potatoes to a Frittata if you’re not worried about the carbs. The recipe is super versatile allowing you to add any veggie or meat you prefer.

I typically use whatever veggies, meats or cheeses that are in the fridge but my favorites are feta cheese, Sausage or bacon, mushrooms and onions.
Start by sautéing Bacon, sausage or any choice of meat in 10 in cast Iron skillet, THIS one is my favorite. If you are vegetarian then obviously you would skip this step and just sauté your veggies in olive oil on medium heat.
While the meat is cooking whisk together 12 eggs and 3 Tablespoons of Dairy (I used 2% milk) and seasonings.
After the sausage or bacon is cooked through, Add in the veggies that need to cook the longest such as onions, carrots, broccoli, etc.
Add in remaining veggies and cook for 3-4 minutes.
Add half the cheese to the egg mixture.
Add the egg mixture directly to the pan and mix gently to evenly distribute the veggies. Cook for 1 minute without stirring on stove top.
Top with remaining cheese and transfer to 425 degree oven and bake for 13 minutes.
Remove Frittata from oven and allow to cool before slicing.
Top with scallions, herbs or more cheese and Serve with a side of fruit.
