EASY HOMEMADE CHICKEN POT PIE
Nothing says comfort food like a good old-fashioned homemade chicken pot pie. I finally came up with a recipe that is easy, delicious and has a little hidden ingredient that makes it stand out from the rest, bacon.

The best part about this recipe is that it can be made in one skillet, which means less dishes to clean. You can make it in any pan and pour it into a pie dish, but I prefer this method using one of my favorite cast iron skillets and covering the chicken mixture with the Pie Crust.
I like to make my own chicken broth by cooking the chicken thighs in water along with seasonings in the crock pot. This way I am able to cook the chicken and reserve the chicken broth for the recipe. I prefer to use chicken thighs that have skin and bone on them since the it makes the broth so much richer. For the recipe I recommend boneless and skinless chicken thighs since you don’t have to debone them, but either will be fine. I don’t recommend using just chicken breast for the broth since it doesn’t contain enough fat to make a rich broth.
I always end up forgetting to thaw out the chicken thighs the night before, so I just put the package of chicken in a bowl of warm water for a little bit and then I can open it and drop it into the crock pot along with the water and seasonings and cook it on high for 3-4 hours. If you do this before you head off to work, then you will want to cook it on low for 6-8 hours and it will be perfectly done when you return home.
This chicken pot pie best topped with an easy homemade butter pie crust (working on that recipe now), but if you don’t have time then use a store-bought pie crust.

One of the unusual ingredients in this recipe is the bacon, and whatever you do, don’t leave it out! It adds such a wonderful flavor to an already delicious dish.

Easy Homemade Chicken Pot Pie
This amazing Chicken Pot Pie is not only easy to throw together, but you can do it in one Pan. It is rich and creamy and bursting with flavor due to the unexpected addition of bacon.
Ingredients
- 3-4 boneless chicken thighs cooked and shredded or a rotisserie chicken
- 3-4 slices of thick bacon chopped
- 1 - 10oz bags of frozen mixed vegetables
- 2 cloves of garlic chopped
- 1 small onion chopped
- 1 1/2 cups chicken broth
- 1/3 cup All Purpose Flour
- 1/2 cup heavy cream
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 1 pie crust (homemade or bought)
- 1 egg for egg wash
Instructions
- Skip this step if you’re using a rotisserie chicken and store bought chicken broth. Add chicken thighs and 2 cups water, 1 teaspoon of salt, pepper and garlic powder into crockpot and cook on high or 3-4 hours or on low 6-8 hours. Remove chicken and shred or chop and reserve broth for pie. Set aside.
- Preheat oven to 400 degrees.
- Sauté bacon until lightly browned in 10.25 " 3.2 quart cast iron skillet.
- Add in onions and garlic and cook until translucent.
- Add in frozen vegetables and stir occasionally. Cook for about 8 minutes or just until vegetables are thawed but still al dente.
- Pour 1 1/2 cups of the broth from the crockpot into a bowl and whisk in flour. Pour into vegetable mixture and cook on medium for 2-3 minutes stirring continuously.
- Add in heavy cream and cook an additional 3 minutes.
- Gently mix in chicken and remove from heat..
- Cover top of mixture in skillet with pie crust and cut 3-4 slits in top to vent.
- Mix 1 egg and 1 Tablespoon of water in a bowl and brush over top of crust.
- Bake for 20-25 minutes or until top of pie crust is lightly browned.
Notes
* You can use rotisserie chicken and ready-made chicken broth if you are short on time.
