Simple Summer Cucumber Salad
This cucumber salad is simple to prepare and offers a refreshing taste during the hot summer days.
The crunchiness of cucumbers and onions, paired with the sweet and tangy taste of honey and vinegar, creates a delightful combination. It’s a nostalgic dish that often reminds people of their mothers and grandmothers from years gone by.
A typical Lunch for me… Good Culture Cottage Cheese sprinkled with Kinders, avocado drizzled with olive oil and seasoned with Kinders The Blend and cucumber salad.

Simple Summer Cucumber Salad
This cucumber salad is so simple and refreshing on a hot summer day. It reminds us of going to Grandma's house on a Sunday afternoon and enjoying a big lunch with family.
Ingredients
- 6 Pickling Cucumbers or 3 English cucumbers washed and sliced 1/2 inch thick
- 1 Small Sweet Onion Chopped
- 1 Cup Apple Cider Vinegar (I use organic, raw and unfiltered)
- 1/4 - 1/2 Cup of Local Honey or Pure Maple Syrup
- 1 teaspoon Salt
- 1/2-1 teaspoon Pepper
- 1 teaspoon Celery Seed
- Sprig of Dill (optional)
Instructions
1. Combine Onions and Cucumbers in a bowl.
2. Mix the remaining ingredients in a glass measuring cup then pour over top of the cucumber and onions and toss together.
3. Refrigerate for at least an hour before serving.
Notes
* I like to mix everything in a large Wide Mouth Mason Jar and keep it in the fridge so I can eat on it during the week.
*I use all organic ingredients when available.
*You can substitute sugar for the honey or maple syrup .
